Fig and Bitters Salad

with radicchio, rocket and burrata

Preparation time: 10 minutes 

Serves: 4 people 

Gluten free

Ingredients 

- 3 ripe figs cut into quarters 
- 1 head of radicchio 
- 3 cups of rocket 


For the dressing: 
- 2tbs of cold pressed extra virgin olive oil 
- 2tbs of red wine vinegar 
- Pinch of sea salt flakes 


To serve: 
- 1 whole burrata

- 1 small handful of lightly crushed walnuts 
 

Method 

In a serving bowl, place the three cups of washed rocket; top with the radicchio and figs. 

In a jar, add the dressing ingredients and shake well to combine before pouring over the salad ingredients. 

Place the burrata on top of the salad and pierce with a knife; use the knife and a fork to open the burrata, dispersing over the salad. Sprinkle the crushed walnuts over the salad and serve. 

Serve as a side to a source of protein such as white fish, chicken or steak.
